Impossible pie was a fad back about 30 or 40 years ago..seems like everyone was making them....thanks for the memory LFF

I'd heard of impossible pie, so I looked it up. Here's the recipe:
READY IN: 1hr 15mins
SERVES: 6
UNITS: US
READY IN: 1hr 15mins

INGREDIENTS
Nutrition- 4
eggs - 2
cups milk (low fat is fine) - 1⁄2
cup margarine or 1/2 cup butter, melted - 1
cup coconut, dessicated or finely shredded - 1⁄2
cup flour - 1
cup sugar - 2
teaspoons vanilla - 1
dash salt (optional)
DIRECTIONS
- Blend all the ingredients until well mixed.
- Pour into a 10" greased pie plate.
- Bake at 350°F for 1 hour or until centre feels firm.
